Lebanese stuffed zucchini

Ingredients:

1 kg, 32 oz, small zucchini
300 g, 10 oz, minced meat
1/2 cup finely chopped onion
3 cloves garlic, peeled and crushed with a dash of salt
1/2 teaspoon dried mint
1 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground cinnamon
1/2 cup fried pine nuts
1 tablespoon pomegranate thickened juice
1/4 cup lemon juice
4 tablespoons shortening or butter
2 1/2 cups water

Preparation:

Core zucchini using an apple corer. Wash well.
Fry onion with half the quantity of shortening until transparent.
Add minced meat and spices and fry for 10 minutes or until tender.
Add pine nuts. Mix well.
Stuff zucchini with meat mixture.
Fry with remaining shortening and place on absorbent paper.
Add zucchini to a pot.
Add water, garlic, mint, pomegranate juice and lemon juice.
Cover pot. Cook over medium heat for 30 minutes.
Serve hot accompanied by cooked rice.
