Lentils with rice

Ingredients:

1 cup white lentils
2 cups long grain rice
4 medium onions, peeled and sliced lengthwise, fried
1/4 cup vegetable oil
1 teaspoon salt
4 cups water

Preparation:

Remove stones and dirt from lentils then wash.
Put water in a pot. Add lentils.
Bring to a boil over medium heat, then reduce heat and cook for 25 minutes or till tender with pot covered.
Add rice and salt, if water is not double the quantity of rice and lentils, add more water.
Cover and boil over low heat for 30 minutes.
Garnish with onions and serve with yoghurt-cucumber salad.
