Mallow leaves in oil
Ingredients:
1 kg, 32oz, green Mallow leaves, finely chopped
3 medium onions, peeled and finely chopped
1/2 cup olive oil
1/2 cup finely chopped fresh coriander
6 cloves garlic, crushed with a dash of salt
1/2 teaspoon salt
A dash of black pepper
1/4 cup water
Preparation:
Wash mallow leaves several times in a bowl, under running water.
Drain, then squeeze with your hands excess water.
Fry onions until golden in hot oil.
Save some onions for garnishing, add mallow leaves to onion pan.
Stir over medium heat.
Add garlic, coriander, salt and pepper.
Mix mixture well. Add water.
Cover and leave on low heat for 20 minutes or until cooked.
Serve cold, garnished with fried onions.
Sprinkle over some lemon juice.
