Orange lentils puree
Ingredients:
1 1/2 cups of red split lentils
1/2 cup rice
1/2 cup vegetable oil
6 cups of water
1 medium sized onion, finely chopped
1 teaspoon salt, as desired
Preparation:
Remove stones and dirt from lentils, wash and drain.
Put oil in a pot over medium heat, add onion and stir till transparent.
Add lentils and rice. Stir for 3 minutes.
Add water and cover pot.
Bring the mixture to a boil, then simmer over low heat for 1 hour, stirring occasionally.
When mixture thickens, mix in salt.
Serve hot with mixed green salad.
