Broad beans and artichoke salad recipe

Recipe ingredients

  • 500 g, 16 oz, artichoke, canned
  • 1 cup green broad beans, peeled
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic, crushed with a dash of salt

Recipe method

  • Wash aritchoke. Halve.
  • Place broad beans in centre of a serving bowl.
  • Arrange around it the artichoke halves.
  • Mix well garlic, lemon juice and olive oil.
  • Sprinkle lemon juice mixture over the broad beans and artichoke.
