Chicken with vegetables recipe

Recipe ingredients

  • 1 chicken cleaned and cut into 4 pieces
  • 1/2 kg, 16 oz, carrots, cooked and cut into circles
  • 1/2 kg, 16 oz, zucchini, cooked and cut into slices, lengthwise
  • 1/2 cup canned mushrooms
  • 1/4 cup cooked green peas
  • 1 large onion, sliced
  • 5 cloves garlic, crushed
  • 1/4 cup vegetable oil and butter mixture
  • 1/4 cup butter
  • 1/2 cup lemon juice
  • 4 cups water
  • 1/2 tablespoon salt
  • 1/2 teaspoon ground allspice
  • 2 bay leaves
  • Some chopped thyme leaves

Recipe method

  • Fry chicken pieces with oil and butter until golden.
  • Remove and place aside.
  • Fry garlic in half quantity of butter.
  • Add lemon juice, salt, allspice, water, bay leaves and thyme.
  • Bring to a boil on medium heat.
  • Add chicken pieces.
  • Cook on low heat for 45 minutes.
  • Remove and place on a large platter.
  • Reserve 2 cups of chicken stock to make chicken sauce.
  • Fry cooked vegetables in remaining butter.
  • Garnish chicken with vegetables.
  • Serve hot accompanied with chicken sauce.
