Recipe ingredients
- 1/2 cup fresh parsley, finely chopped
- 6 eggs
- 1/2 cup finely chopped onion
- 1/4 cup plain flour
- 2 medium zucchini, finely chopped
- 1 sweet pepper, washed and grated
- 1/2 teaspoon salt, as desired
- 1/4 teaspoon ground allspice, as desired
- 1/4 teaspoon ground chili pepper
- 1/2 teaspoon baking powder
- Lemon zest
- 2 cups vegetable oil
Recipe method
- Wash chopped parsley and drain well.
- Mix chopped onions, salt, spices, parsley, chopped sweet pepper and zucchini.
- In another bowl, mix flour with baking powder then add to vegetable mixture.
- Blend eggs in a separate bowl, stir-in lemon zest.
- Add mixture to vegetable mixture and stir.
- Heat oil in a pan, pour in a spoonful of omelet.
- Turn over each ball till it is golden-brown from both sides.
- Repeat the process with the remaining mixture.
- Serve balls warm with salad and fried potatoes.
- You can substitute whole zucchini with its cores.
