Fried omelet balls recipe

Recipe ingredients

  • 1/2 cup fresh parsley, finely chopped
  • 6 eggs
  • 1/2 cup finely chopped onion
  • 1/4 cup plain flour
  • 2 medium zucchini, finely chopped
  • 1 sweet pepper, washed and grated
  • 1/2 teaspoon salt, as desired
  • 1/4 teaspoon ground allspice, as desired
  • 1/4 teaspoon ground chili pepper
  • 1/2 teaspoon baking powder
  • Lemon zest
  • 2 cups vegetable oil

Recipe method

  • Wash chopped parsley and drain well.
  • Mix chopped onions, salt, spices, parsley, chopped sweet pepper and zucchini.
  • In another bowl, mix flour with baking powder then add to vegetable mixture.
  • Blend eggs in a separate bowl, stir-in lemon zest.
  • Add mixture to vegetable mixture and stir.
  • Heat oil in a pan, pour in a spoonful of omelet.
  • Turn over each ball till it is golden-brown from both sides.
  • Repeat the process with the remaining mixture.
  • Serve balls warm with salad and fried potatoes.
  • You can substitute whole zucchini with its cores.
