Grilled pigeons recipe

Recipe ingredients

  • 8 pigeons, each 500 g, 16 oz, cleaned
  • Melted butter
  • 1 tablespoon salt, as desired
  • 1/2 teaspoon ground white pepper

Recipe method

  • Rub pigeons inside and out with salt and pepper.
  • Brush with butter.
  • Place in an oven tray.
  • Bake in a moderate heat oven till tender and browned for about 45 minutes.
  • Serve hot with Hummus bi-tahini.
