Recipe ingredients
- 750 g, 24 oz, firm white fish fillets, cut into strips, each 2x5 cm
- 1 teaspoon finely grated lime rind
- 1 egg, beaten with a dash of ground white pepper
- 1 teaspoon salt, as desired
- 2 teaspoons chopped fresh coriander
- Vegetable oil for deep frying
- 1/2 cup milk
- 1/2 cup flour
- 1/2 cup dried breadcrumbs
Recipe method
- Place breadcrumbs, coriander, salt and lime rind in a small bowl and mix to combine.
- Dip each fillet in milk, then in flour, egg, and finally in breadcrumb mixture.
- Place fillets on a plate lined with plastic food wrap, cover and chill for at least 30 minutes.
- Heat oil in a large, deep sauce pan and cook fillets in batches for 2-3 minutes or until golden.
- Using a slotted spoon remove fillets and drain on absorbent kitchen paper.
- Serve hot garnished with parsley and lemon wedges.
