Ground fish recipe

Recipe ingredients

  • 750 g, 24 oz, firm white fish fillets, cut into strips, each 2x5 cm
  • 1 teaspoon finely grated lime rind
  • 1 egg, beaten with a dash of ground white pepper
  • 1 teaspoon salt, as desired
  • 2 teaspoons chopped fresh coriander
  • Vegetable oil for deep frying
  • 1/2 cup milk
  • 1/2 cup flour
  • 1/2 cup dried breadcrumbs

Recipe method

  • Place breadcrumbs, coriander, salt and lime rind in a small bowl and mix to combine.
  • Dip each fillet in milk, then in flour, egg, and finally in breadcrumb mixture.
  • Place fillets on a plate lined with plastic food wrap, cover and chill for at least 30 minutes.
  • Heat oil in a large, deep sauce pan and cook fillets in batches for 2-3 minutes or until golden.
  • Using a slotted spoon remove fillets and drain on absorbent kitchen paper.
  • Serve hot garnished with parsley and lemon wedges.
