Lebanese stuffed zucchini recipe

Recipe ingredients

  • 1 kg, 32 oz, small zucchini
  • 300 g, 10 oz, minced meat
  • 1/2 cup finely chopped onion
  • 3 cloves garlic, peeled and crushed with a dash of salt
  • 1/2 teaspoon dried mint
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup fried pine nuts
  • 1 tablespoon pomegranate thickened juice
  • 1/4 cup lemon juice
  • 4 tablespoons shortening or butter
  • 2 1/2 cups water

Recipe method

  • Core zucchini using an apple corer. Wash well.
  • Fry onion with half the quantity of shortening until transparent.
  • Add minced meat and spices and fry for 10 minutes or until tender.
  • Add pine nuts. Mix well.
  • Stuff zucchini with meat mixture.
  • Fry with remaining shortening and place on absorbent paper.
  • Add zucchini to a pot.
  • Add water, garlic, mint, pomegranate juice and lemon juice.
  • Cover pot. Cook over medium heat for 30 minutes.
  • Serve hot accompanied by cooked rice.
