Recipe ingredients
- 1 kg, 32 oz, small zucchini
- 300 g, 10 oz, minced meat
- 1/2 cup finely chopped onion
- 3 cloves garlic, peeled and crushed with a dash of salt
- 1/2 teaspoon dried mint
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground cinnamon
- 1/2 cup fried pine nuts
- 1 tablespoon pomegranate thickened juice
- 1/4 cup lemon juice
- 4 tablespoons shortening or butter
- 2 1/2 cups water
Recipe method
- Core zucchini using an apple corer. Wash well.
- Fry onion with half the quantity of shortening until transparent.
- Add minced meat and spices and fry for 10 minutes or until tender.
- Add pine nuts. Mix well.
- Stuff zucchini with meat mixture.
- Fry with remaining shortening and place on absorbent paper.
- Add zucchini to a pot.
- Add water, garlic, mint, pomegranate juice and lemon juice.
- Cover pot. Cook over medium heat for 30 minutes.
- Serve hot accompanied by cooked rice.
