Yogurt potato salad
Ingredients:
3/4 cup yogurt
1/4 cup low fat mayonnaise
2 teaspoons prepared mustard
2 teaspoons horseradish
4 cups cubed cooked potatoes
1 cucumber, seeded and cubed
1/2 cup sliced celery
1/4 cup chopped onion
1 tablespoon green onion, chopped (only green part)
Preparation:
Combine yogurt, mayonnaise, mustard and horseradish in large mixing bowl.
Add potatoes, cucumber, celery, onion and green onion. Mix well.
Chill at least 2 hours.
