Chilled summer salad recipe

Recipe ingredients

  • 2 medium zucchini, cut in half lengthwise and thinly sliced
  • 1 pint cherry tomatoes, quartered
  • 1 medium green bell pepper, chopped
  • 1 medium onion, chopped
  • 1/2 pound sharp white Cheddar cheese, diced
  • 1/4 cup mayonnaise
  • 2 tablespoons cider vinegar
  • 2 tablespoons sugar
  • 1 tablespoon fresh dillweed (1 teaspoon dried)
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Recipe method

  • In a large bowl, combine the zucchini, tomatoes, green pepper, onion and cheese. Mix well.
  • In a small bowl, combine the remaining ingredients. Mix well.
  • Add the mayonnaise mixture to the tomato mixture and toss until well coated.
  • Cover and chill for at least 2 hours or until ready to serve.
