Garlic soup
Ingredients:
2 tablespoons olive oil
6 cloves garlic, crushed
3 slices French bread, crusts removed
4 cups chicken broth
Salt and pepper, to taste
Preparation:
Saute garlic cloves and bread in oil over medium heat until they are just browned (do not let them burn).
Remove from heat.
Cut the bread into 1-inch squares and return the cubes to the pan.
Add chicken broth, bring to a boil, cover, and simmer for 20 minutes, or until the bread has disintegrated and mixed well into the broth.
Add salt and pepper to taste.
