Pavakka (Bitter gourd / Kerala) theeyal is a delicious Kerala recipe. Pavakka / Bitter Gourd has many health benefits. It has some good medicinal value and helps in reducing blood sugar levels. Bitterness is tasty, but you can add tamarind is added while pavakka is cooking overcome the bitterness.

Ingredients

  • Bitter Melon / Bitter Gourd(pavakka) Cut Vertically In Half, Seeds And Flesh Scooped Out And Slice - 2
  • Tamarind - 2 Tablespoon
  • Turmeric Powder 1/2 Tablespoon
  • Chilly Powder - 1 Tablespoon
  • Coriander Powder -2 Tablespoon
  • Garlic - 5 Cloves
  • Ginger - 1 Medium Pcs
  • Grated Coconut 1cup
  • Cooking Oil -  2 Tablespoon
  • Mustards Seeds 1 Tablespoon
  • Cumin Seeds - 1/2 Tablespoon
  • Onion Chopped - 3 Tablespoon
  • Curry Leaves -1 Spring
  • Green Chillies - 3
  • Salt To Taste
  • Roast And Grind To A Paste
  • Grated Coconut - 1 Cup
  • Dried Red Chillies - 5
  • Chilly Powder - 1 Tablespoon
  • Coriander  Powder-2 Tablespoon
  • Turmeric Powder - 1/2 Tablespoon
  • Cumin Seeds - 1/2 Tablespoon
  • Garlic - 5 Cloves

Directions

  • 1Soak the tamarind in one cup water, squeeze out the pulp. Strain and pour into a deep pan. Repeat with 1/2 cup water two more times.
  • 2Heat the one tablespoon coconut oil and add onions Ginger, green chillies , curry leaves allow them to cook,  saute it well till it becomes brown in color then add bitter melon to it. Saut√© till it softens a little. Add the salt and Cook over medium heat till the bitter melon are cooked and soft.
  • 3Meanwhile, roast the coconut along with the red chillies, garlic, cumin seeds over low-medium heat till the coconut becomes light brown in color throughout. After that add chilly powder, coriander powder, turmeric powder then saute it for one minute.
  • 4Let it cool and grind to a very fine paste in a food processor or an Indian style mixie, with a little oil to help grind better.
  • 5Pour this coconut mixture into the pan on the stove with the bitter melon and add tamarind water along with little water.
  • 6Mix well and allow it to come to a boil. Put the flame in Simmer, after two minutes the coconut oil will come to the upper portion of the curry then switch off the flame. So our kerala style pavakka theeyal curry is ready.
  • 7Serve hot with rice.
